Fusarium wilt is a disease that causes up to 40% of production losses, as a result of which new cultivars
resistant to Fusarium guttiforme have been launched and ‘Vitória’ is an example. Little is known scientifically about the
sensorial differences that consumers perceive when consuming different pineapple cultivars, therefore the objective
of this work was to evaluate whether there is a sensorial difference between the cultivars Pérola and Vitória. The fruits
used were produced and collected in the demonstration unit (DU) installed in the municipality of Boa Esperança – ES.
The spacing used was in double rows (1.2 m between a double row, 0.4 m between double rows and 0.3 m between
plants), allowing a density of 41,666 plants/ha. A randomized block design was used, with 4 replications, totaling 24
plants per replication. The plants were grown with mulching, fertigation and the cultivars Pérola and Vitória were used,
totaling 192 seedlings of each cultivar. The fruits were harvested after 150 days and immediately packaged in a way
that protected them from any physical and chemical changes. The sensory analysis was carried out with 60 consumers
chosen at random on 08/12/2022 at the H and J supermarket in Boa Esperança. The results showed that consumers
were able to identify that the cultivars are different and both have a market, as long as they are produced with quality.
